Baked Zucchini Chips with Parmesan Cheese

I’m always looking for ways to use zucchini and found a great one that also would make a good snack or appetizer for a special occasion, even New Year’s Eve or a Super Bowl Party. I’ve served them with a ranch dipping sauce and even tried them with a sauce made from caramelized onions, vinegar, Dijon mustard, honey and mayonnaise. Both dips were delicious. Your guests can choose whether they want to use the sauce or try the zucchini alone.

These are a bit time consuming to make and my recommendations is to use them as just one of the appetizers, adding a few others that won’t take up your time making them. I’ve thought of making them ahead of time and freezing them, but haven’t tried it yet. If anyone has, let me know how it worked out.
