Cheesy Chicken Spaghetti Casserole


Oh, how I love having guests over to the house, especially for dinner. I’m always on the lookout for dishes that everyone will love, but also ones that won’t cost me a fortune to make, particularly when I’m serving several families a meal. This dish was so absolutely great that I was glad it made more than I thought it would, since everyone, even the younger children, asked for seconds and a few asked for thirds!

I served this with a fresh salad that was ready made in a bag. Don’t worry, I didn’t overspend. I bought two bags of salad marked with the “Wahoo” special tag that means it’s super discounted and will be past the consume by day soon. We actually love these when we can find them at a discount, but otherwise, I made my salad from scratch.

Try this recipe and I know you’ll love it. It makes a lot, so be prepared to have plenty left over or invite family and friends for dinner.

You’ll Need:
16 oz spaghetti cooked and drained
1 lb Velveeta cubed (or Mild Cheddar Cheese)
1 cup cooked chicken diced (leftover chicken)
1 can cream of mushroom soup 10 oz
1 can cream of chicken soup 10 oz
1 can of either petite diced tomatoes or Rotel tomatoes (drained)
1/2 cup milk
3/4 cup chicken stock
1 tbsp minced garlic
1/4 cup sliced onions
1/4 cup bell peppers (cut into small cubes)
1/4 cup celery
