Cheesy Egg Toast for Breakfast

Here’s a unique way to bake an egg, but it made me think. How I love it when my whole family gets together for a holiday breakfast at the house on New Year’s Day, Easter and sometimes on the 4th of July, but I really hate trying to find enough skillets to cook eggs for all 16 of them at once. I’ve used egg casseroles, which were very popular, but when I found this, I knew I had to try it. It was far simpler and I could get the kids to help. It also didn’t require a lot of bake time.

This was an instant hit! While it baked, I cooked the bacon in the skillets that would otherwise be busy making eggs. I took some of these out a little earlier than others for those who like a runnier yolk and wish I could give you the magic formula for how long each took, but it was trial and error. Everyone loved their eggs, but I ended up with a different problem.

They all wanted seconds and thirds, so back to the kitchen I went. I had planned ahead a bit and had a few baking in the oven, but not nearly enough for all the requests. My biggest tip is to make enough for two for each person and a few extra.
